Understanding consumers' behavior and their handling of high-risk foods at home is essential for reducing the number of foodborne illnesses. This study shows the results of a cross-national analysis of consumers' perception from nine countries, and the identification of customers' clusters and its characteristics in order to understand customers' behavior, and to build safe chilled ready-to-eat (RTE) foods prevention strategies. The cluster analysis resulted in two clusters: (1) "Precautious consumers" characterized by the orientation towards pre-packed RTE foods, with consumers mainly coming from Bosnia and Herzegovina, India, Poland, Portugal, Spain, and Turkey. Their attitudes and self-reported practices may be categorized as less risky in terms of food-borne illnesses connected with the consumption of RTE foods; (2) "Unconcerned consumers" preferred cutting and slicing RTE foods freshly at the point of purchase, usually sold at the delicatessen department in a supermarket or at open markets. Those consumers mostly came from Croatia, Serbia and Slovenia and their attitudes and self-reported practices were riskier. These results allow a better understating of what characterizes consumers of RTE foods in different countries.

The review aimed to analyse the latest data on microorganisms present in organic food, both beneficial and unwanted. In conclusion, organic food's microbial quality is generally similar to that of conventionally produced food. However, some studies suggest that organic food may contain fewer pathogens, such as antibiotic-resistant strains, due to the absence of antibiotic use in organic farming practices. However, there is little discussion and data regarding the importance of some methods used in organic farming and the risk of food pathogens presence. Concerning data gaps, it is necessary to plan and perform detailed studies of the microbiological safety of organic food, including foodborne viruses and parasites and factors related to this method of cultivation and specific processing requirements. Such knowledge is essential for more effective management of the safety of this food. The use of beneficial bacteria in organic food production has not yet been widely addressed in the scientific literature. This is particularly desirable due to the properties of the separately researched probiotics and the organic food matrix. The microbiological quality of organic food and its potential impact on human health is worth further research to confirm its safety and to assess the beneficial properties resulting from the addition of probiotics.

Supervision over the suppliers of packaging as well as suppliers of raw materials for packaging production is important to ensure the quality and safety of meat products. The aim of this study was to verify the remote evaluation procedure of quality, processing and economic criteria in qualification of raw materials suppliers to the meat packaging foil producer during the Covid-19 pandemic. The evaluation was done remotely in terms of meeting some of the requirements of the quality management system (QMS) in conditions where regular audit could not be carried out. The survey was conducted in one of the biggest packaging foil producers in Greece via its supplier evaluation. The evaluation consisted of: 1/ economic criteria and 2/ quality and processing criteria. The highest and the lowest rated economic criteria were procedural compliance and price of raw materials. Among the quality and processing criteria, the highest score was given to warranties and claims policies and material quality, and the lowest one to lead time. The highest ratings obtained suppliers of raw materials directly involved in production, suppliers from Greece, the USA and Denmark, as well as suppliers to the R&D department. The results of the study showed that the quality of the raw materials directly used in the production of packaging foil was adequate. Therefore, their use ensure production of packaging foil and finally packaged meat products of adequate quality and safety. The presented procedure occurred to be useful for remote evaluation of quality, processing and economic criteria in qualification of suppliers during the Covid-19 pandemic. It may inspire other producers of food packaging materials to continuing supervision over their suppliers while regular methods of control are limited.

(1) Introduction: Regular physical activity (PA) is an important part of a healthy lifestyle for children and adolescents. The aim of this study was to assess the impact of an increase in organized PA at school on the physical fitness (PF) of early adolescent boys and girls. (2) Methods: A total of 294 children born in 2007 took part in the study. The sample was divided into two groups: of increased PA at school (n = 140, girls n = 66, boys n = 74) and standard PA (n = 154, girls G n = 70, boys n = 84). Increased and standard PA levels consisted of 10 and 4 h of physical education lessons (PE) per week, respectively. PE consisted of team games and fitness exercises. Three of the Eurofit tests, core strength, long jump, and running speed, were used to measure PF. Tests were conducted in May 2018 and 2019, at an average age of a participant of 11 and 12 years, respectively. Descriptive statistics and cluster analysis were applied for analyzing the results. (3) Results: After one year of observation PF of children was improved in both groups (p < 0.001). However, it was greater in the increased PA group than in the standard one. A higher percentage of very good scores and lower of poor and very poor were noted in the increased PA group than the standard one (20.36% vs. 12.90%, p = 0.003 and 18.58% vs. 24.85%, p = 0.022, respectively). Boys obtained better results than girls (p = 0.003). Children achieved the best results in the shuttle run test, and the worst in the core strength. Children with normal body mass obtained better results than those with excessive ones. (4) Conclusions: Increasing the number of PE at school beneficially affects the fitness performance of early adolescents. To improve the health status of adolescents it is advisable to increase the number of compulsory PE lessons in the school curriculum.

(1) Background: Diet and physical activity (PA) significantly impact health. The aim of this study was to evaluate the impact of long-term increase in organized PA level at school on the eating behaviour and leisure time of early adolescences in the period from the age of 10 to 12. (2) Methods: Children born in 2007 (n = 278) in groups with a standard (control group) and increased level of organized PA at school (4 and 10 h a week) were subjected to an anonymous follow-up survey. The questionnaire included 22 questions related to the eating behaviour and ways and frequency of leisure time PA. The study was conducted in the same groups in three assessment sessions in September 2017, 2018 and 2019. (3) Results: During the course of the study, it was shown improvement of eating behaviour in the increased PA group whereas decline in the standard PA one. The share of children with good and very good scores of eating behaviour decreased in the standard PA group from 56.89% to 54.54% and increased in the increased PA from 58.06% to 60.29%. In the increased PA group children more frequently than standard PA ate vegetables, fruits, fish, poultry meat, wholemeal bakery products, milk, dairy products and drinking tea without sugar, as well as ate breakfast. The standard PA children more frequently than increased PA ate high sugar and/or fat content food as sweets, savoury snacks and drank fizzy drinks as well as fast foods. The frequency of often undertaken leisure time PA increased in the increased PA group from 67% to 74%, while decreased in the standard PA from 58% to 52%. (4) Conclusions: Increase in organized PA at school beneficially influenced early adolescents' eating behaviour and frequency of leisure time PA during 2 years observation. It also increased early adolescents' awareness of healthy diet. Increased PA at school helps shaping healthy lifestyle among early adolescents.

(1) Background: A sedentary lifestyle and low physical activity (PA) increase the risk of hypertension in children. The aim of this study was to assess the impact of increased PA at school by elevation of the number of compulsory physical education (PE) lessons on arterial blood pressure in children during a two-year follow-up. (2) Methods: Children (n = 245) born in 2007 attending a standard or elevated number of PE lessons in the school timetable (4 and 10 h a week, respectively) took part in the study. Blood pressure was measured starting from age approx. 10 to 12. (3) Results: Starting from a similar level, after 2 years, the percentage of children with normal blood pressure decreased in the standard-PE children from 83.25% to 78.03% but increased in the elevated-PE ones from 83.15% to 86.13%. The prevalence of both prehypertension and hypertension increased by one-third in the standard-PE children from 16.74% to 21.97% but decreased by one-sixth in the elevated-PE ones from 16.85% to 13.87%. The prevalence of hypertension itself increased by one-third in the standard-PE children from 9.82% to 13.12% but decreased in the elevated-PE ones by one-fifth from 9.60% to 7.75% (4) Conclusions: An increase in PA at school by the elevation of the number of PE lessons benefits children's arterial blood pressure. Early prevention of hypertension in children can be supported by an adequate number of PE lessons in the school timetable.

(1) Background: Children's overweight and obesity are a growing public health problem. The aim of this study was to assess the influence of physical activity (PA) at school on body mass of children aged 10-12 during 2 years of observation. (2) Methods: Primary school children (n = 245, 48% girls and 52% boys) took part in the study. Children were divided in two groups, (1) of standard PA and (2) of elevated PA at school corresponding to 4 and 10 h of physical education lessons (PE) a week, respectively. Weight, height, and body mass index (BMI) were measured starting from the 4th grade and ending at the 6th grade of school. (3) Results: The number of children with excessive body weight (overweight and obese) increased by » in children of standard PA while slightly decreased in children of elevated PA. Many more children of elevated PA changed body mass category from overweight to healthy weight than those of standard PA. Girls, especially of standard PA, had more often excessive body weight compared to boys. (4) Conclusions: Increasing time of physical activity at school by elevation of the number of PE lessons favorably affects the body mass of children.

This study aimed to determine the differences in the frequency of, reasons for, and barriers to purchasing organic food among the inhabitants of the Visegrád Group member states. The selection of the countries for the study was dictated by the fact that the countries of Central and Eastern Europe play the role of a niche market in the European organic food market. This research employed the method of a diagnostic survey and the discriminant function. A chi-squared test, ANOVA, and Fisher's Post Hoc LSD test were also used to present differences in individual groups. This research shows that respondents from Poland, the Czech Republic, Hungary and Slovakia were guided by similar behaviors regarding the purchase of organic food. However, the attitudes of the respondents slightly differed between countries. In the case of the reasons for choosing organic food, the most important thing was that it is non-genetically modified food, especially for Polish consumers. The following were also mentioned: lack of chemical compounds (Slovaks and Czechs), high health value of such food (Czechs and Slovaks), and excellent taste (Hungarians). The most critical barriers against purchasing are the price (Poles and Hungarians), difficult access (Poles and Hungarians), and the short expiry time of such products (Slovaks).

Today, street food vending is becoming a dynamically developing food industry in Europe, including Poland. Lifestyle changes and socioeconomic factors, especially among young consumers, make it a convenient food alternative, even in countries without this tradition. The aim of the study was to evaluate hygiene conditions and practices in selected street food facilities in Poland. The study was carried out in accordance with an observation checklist developed on the basis of the hygienic requirements of the European Union. The study covered 550 randomly selected street food vendors in Poland in 10 cities. The hygiene of street food outlets was assessed in three aspects: ensuring proper production conditions, hygiene of production and distribution, and hygiene of personnel. The evaluation of street food outlets showed that the level of hygiene was not fully acceptable. A small percentage of the examined objects satisfactorily fulfilled the requirements of the production conditions, production and distribution hygiene, and staff hygiene. The proposed hygienic checklist for quick daily monitoring of street food outlets can be used to perform internal and external inspections. It seems that specific codes of conduct for European street foods facilities are necessary.

Street food plays an increasingly important role in the nutrition of the inhabitants of European cities. Our study aimed to analyze Polish consumers' attitudes toward food offered in street food outlets, consumers' eating out behavior, and the factors that determine their choice of meals from street food vendors. A survey was conducted of 1300 adult respondents who eat street food in Poland. The research enabled a detailed and comprehensive assessment of consumer behavior toward the use of street food outlets, as well as consumer opinions on vendors' functioning, including hygiene and meals offered. Factors determining the frequency of street food consumption, preferred food types, and factors influencing the use of such outlets were identified. The most important factors were the quality of services and meals, personal preferences and price. Using cluster analysis, consumer profiles based on the types of street food outlets and food preferred were identified. Four main street food consumer preference profiles were identified: 'burger-enthusiasts', 'kebab-enthusiasts' and 'ice-cream enthusiasts', and 'no specific-oriented consumers'. The Internet and social media were identified as information and promotion channels for this form of gastronomy. Results also revealed Polish consumer behavior and opinions about the food safety of street food in Poland. In summary, in Poland the habits of eating typical Polish homemade dishes is being replaced by eating meals in street food outlets, which can be classified as fast food. Increasing consumer knowledge and awareness of the quality and safety of street food may counteract improper hygiene practices of sellers.

Food safety is perceived differently by consumers in different countries. The objective of this study was to examine the experience of young adults regarding the safety of meals eaten outside the home in Poland and Turkey. Questionnaire surveys were conducted on a group of 400 young adults. The findings provided new insights into cross-cultural consumer perceptions of the food safety of meals eaten out. Differences in the perception of the safety of the meals eaten out concerned both the manner in which consumers chose an eating establishment, the frequency with which they ate out, their experience of the meals consumed, and their practice of lodging complaints. Consumers in Poland and Turkey experienced different problems with the health quality of meals eaten out. The experience of consumers in Turkey reflected the occurrence of numerous cases of meals of poor quality, while in Poland it was smaller. This suggests that meals eaten out in Poland (an EU country) may have a lower health risk than in Turkey (a non-EU country). The method described in this study could be an additional tool for checking the operation of food safety systems in eating out establishments.

The aim of this study was to evaluate the body mass index (BMI), selected eating behaviour and physical fitness of children aged 10 years attending general education and sports classes in Siedlce. Subject children were 272 girls and boys mean aged 10.8-years attending general education (GC) and sports classes (SC). Survey questionnaires consisted of 18 questions about eating behaviour and physical activity. The BMI was determined for each child and compared with reference percentile charts. Eurofit testing was used to measure physical fitness. Increased physical fitness was positively correlated with beneficial eating behaviour among children. SC children showed significantly more frequent dietary intakes of milk, dairy products, poultry, fish, wholegrain bread, groats and vegetables when compared to GC ones. However, significantly more GC children ate red meat more frequently along with snacking on confectionery and savouries than SC ones. Most subjects fell within correct BMI percentile ranges. Underweight was more frequent in SC children at 12.85% than in GC children 9.88%. Overweight and obesity was most often observed in GC children (respectively 19.73% and 5.51%) compared to SC ones (respectively 14.37% and 3.8%). SC children achieved significantly better results in the Eurofit tests. The highest levels of physical fitness and most favourable BMIs and eating behaviour were observed more often among SC children than GC ones. The results confirmed the beneficial health effects of physical fitness for children.

The aim of our study was to analyze the attitudes of employees toward food offered in staff canteens, to analyze their eating behavior and the factors determining the choice of meals in staff canteens. The survey was conducted on a sample of 600 adult respondents, who patronize staff canteens in Warsaw, Poland. The research enabled a detailed and comprehensive assessment of consumer behavior toward the use of staff canteens, as well as their opinions on the functioning of the canteens and meals offered. Factors determining the frequency of use of canteens, type of meals, and factors influencing the use of such establishments were identified. Respondents assessed the quality and variety of meals, with the size of portion being the most valued. They were satisfied with the functioning of the canteens and had very few comments. However, they pointed out the need for an increase in the variety of meals, including the availability of vegetarian and vegan dishes. Our research enabled us to establish consumer profiles based on the reasons for not using staff canteens and comments about staff canteens. Patrons of staff canteens were referred to as "canteen enthusiasts" or "canteen medium-enthusiasts", who are "snack lovers", as well as "food choice-oriented" or "quality-oriented". The results provide the basis for practical implications for owners or managers of staff canteens, part of whose work it is to analyze the needs and expectations of their potential customers.

Poland is one of the largest food producers in Europe, and the West Pomeranian region of Poland is a large producer of RTE food. Thus, the objective of this study was to determine the prevalence of Listeria sp. and L. monocytogenes (LM) in RTE foods manufactured by 13 selected Polish food producers whose processing plants are located in this region. In total, 650 samples of RTE foods, and 263 ingredients of salads and desserts were analyzed. Almost 18% of the RTE foods failed to meet the zero tolerance limit for Listeria, which means they should not be allowed for retail. LM was isolated from 13.5% of the samples, with counts of 10-100 CFU/g noted in half of them. Products with meat and dairy ingredients, and fish products, sandwiches, sprouts and sushi, were at the highest statistically significant risk of LM contamination. Four serogroups were identified among the LM isolated from RTE foods, of which the 4b-4d-4e serogroup was predominating. The samples most heavily contaminated with LM contained even 2 serogroups. Results were subjected to the cluster analysis and principal component analysis to determine correlations between food groups, food ingredients, producers, contamination level, and serogroups of LM.

The purpose of the paper was a cross sectional study to evaluate the use of sugars and selected sweeteners by Polish consumers in their diet. The survey was conducted using the direct interview method on the group of 2000 adults declaring the consumption of sugar or sweeteners. The ANOVA test and multi-dimensional cluster analysis was used to the data interpretation (p < 0.05). It was stated that the consumption of sugar among consumers remained at a high level. Respondents declared taking up the activities towards reducing sugar intake in their diet mostly due to health-related reasons. It was emphasized in particular by women taking part in the survey. The most frequent way to limit the amount of sugar in the diet consisted in choosing sweeteners, mainly stevia and xylitol. However, the knowledge concerning steviol glycosides among the consumers was not extensive. Results are the source of up-to-date information concerning the consumption of sugar and sweeteners. Consumers to whom nutrition campaigns on the necessity to limit the content of sugar in the diet are worth addressing were identified. A hypothesis, that consumers are currently more aware of the negative influence of increased sugar consumption on their health and they aim at limiting the content of added sugar in their diet, was confirmed.

The aim of this study was to evaluate hygiene conditions and practices in selected street food facilities in Paris, France. One hundred twenty mobile food establishments were studied: kiosks, 66 (55%); stands, 32 (26.7%); and food trucks, 22 (18.3%). Inspection of street food vendors and short interviews with staff using a specially designed checklist revealed that none of them were entirely hygienic. The hygiene conditions of the facilities themselves were the most satisfactory (77% of them were up to standard), but hygiene was less so for production and distribution processes (65% were satisfactory) and personal hygiene (67% were satisfactory). A significant ( P ≤ 0.05) correlation between the general hygiene status and the hygiene conditions of the production and distribution processes ( r = 0.86) and the hygiene practices of workers ( r = 0.86) was found. The instances of noncompliance that were found may affect the safety of street-vended food. Because of its increasing popularity, it is important to correct poor hygiene practices. It is very important to identify common instances of noncompliance for street food facilities and to develop real remedial actions. Procedures to control the hygiene of street food vendors should also be developed. The checklist, which was specially designed to evaluate street vendor outlets, could also be used to pre-assess the hygiene conditions of production by those responsible for food hygiene. Furthermore, it could serve as a checklist for self-assessment (internal audit) by the vendors themselves and be adopted as a consumer education tool, to increase awareness of food hygiene of a catering facility.

Background: Providing safe food products to the consumer depends on the material and technology used and adherence to hygienic practices, throughout the production process. The degree of microbial contamination of a surface is an important indicator of equipment cleanliness and effectiveness of cleaning and disinfection. Used material, construction solutions and quality of the applied devices also have an effect on hygienic status. Objective: The objective of the present study was to evaluate the influence of the design and construction material of selected food storage racks, available on the Polish market, on their hygienic status. Material and methods: The study was based on determination of the capability of microbial growth on the surface of the racks and the effectiveness of their cleaning. Microbiological cleanliness on the surface of the racks was monitored by the contact plates which are able to estimate the total number of icroorganisms. Examination of effectiveness of cleaning was conducted by the use of ATP bioluminescence method. Results: This experiment has proven a significant influence of adopted construction solutions on the hygienic status of the examined racks. Presence of antibacterial layer and a choice of the appropriate construction material characterized by a low surface roughness impedes the microbial growth and increases the effectiveness of cleaning. Conclusions: Design solutions have significant impact on the hygienic status of shelves. Selection of a suitable material for the construction of racks can greatly reduce the possibility of the development of microorganism, despite the low efficiency of the cleaning. The application of antimicrobial coatings inhibits microbial growth.

BACKGROUND: The nutritional value of honey is a factor that encourages the increase of its consumption. The aim of the study was to identify consumers' behaviours and preferences towards honey and their determinants. METHODS: Quantitative (PAPI method) survey was carried out in 2015 on a sample of 690 respondents from Mazowieckie, Podkarpackie and Zachodniopomorskie voivodeships. The data analyzed were: the frequency of and reasons for honey consumption, preferred buying locations, preferred types of honey, factors considered during purchase and different uses of honey. RESULTS: The study showed that Poles consume honey several times per month. The main incentives for honey consumption were: health benefits, a wide range of culinary uses, flavour and habits. It was established that Polish consumers buy honey mainly in apiaries and open-air markets. Primary factors considered during purchase were the type of honey (preferred types being lime, polyfloral and acacia), price and colour. Honey was chiefly used for consumption, most commonly as a sandwich spread and sweetener. Less popular ap- plications included medical and cosmetic purposes. Some socio-demographic characteristics (gender, age, place of residence, income), self-assessment of nutritional knowledge and, to a lesser extent, education sig- nificantly differentiated consumer behaviours in the honey market. CONCLUSIONS: The study has shown that Poles consume honey relatively seldom. For the increase of honey consumption nutritional education is needed. Further studies will allow a more detailed diagnosis, which is required for the development of effective information and marketing strategies.

N-Nitroso compounds (NOCs), heterocyclic amines (HCAs), and polycyclic aromatic hydrocarbons (PHAs) are examples of carcinogenic substances, which are formed during cooking and processing of meat. Many researches suggest that high consumption of meat is positively associated with increased risk of some cancers. The majority of the researches are of epidemiological nature and, therefore, provide only associations related to population exposure to diet-related carcinogenic substances. The individual's exposure risk may be estimated by using food frequency questionnaire and analytical methods. However, there is a lack of methods which enable estimation of the risk concerning particular meat meals. The purpose of this paper was to summarize and emphasize the importance of factors influencing the formation of carcinogenic substances in meat during cooking.
